Pretzel


Kalau jalan-jalan ke Mall, Zaki senang sekali beli soft pretzel Auntie Anne, enak sih tapi mahal juga. Mendingan juga buat di rumah, jadinya banyak ha.ha...

Zaki lebih pintar dari saya untuk membentuk pretzel (seperti angka delapan), tangannya terampil sekali...yang ditampilkan disini hasil karya dia.



Soft pretzel
Ingredients, for 12.
3 ½ C of bread flour
4 T brown sugar + 2 T sugar
1 tsp. sea salt
1 T yeast
1/3 C warm milk
2/3 C warm water
2 T butter,melted

2 T baking soda mixed with 1 cup hot water in a small bowl for water soda solution
1 egg yolk + 1 T milk beaten in a small bowl

Directions:

1. In a large mixing bowl, mix together 3 C flour, yeast, brown sugar and salt.
Add water gradually and beat with an electric mixer on low speed 30 second, scraping bowl constanly. Beat on medium speed for about 3 minutes until the dough is soft.
2. Turn dough out onto a lightly floured surface and knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (about 5 minutes).
Form into a ball and place in a lightly greased bowl, cover with plastic wrap, and allow to rise in a warm place for 1 hour.
3. When dough is risen enough, punch down and turn dough out onto a lightly floured surface. Make dough into a smooth rectangle shape and let rest for 10 min. Using pizza cutter cut dough lengthwise into twelve 1-inch strips. Roll each piece into a rope, very thin, a little bigger than a pencil. Shape into an upside down U shape on your table. Bring the ends together and twist them. Flatten the ends and bring to the top of the pretzel and press in the dough to secure making it look like a pretzel. Allow pretzel to sit for about 1-2 min.
4. Dip in the water-soda solution. Place on a greased cookie sheet. Brush with beaten egg yolk. Bake in a preheated 375 degree oven for 10 minutes or until golden brown.

For cinnamon sugar:
Brush simple syrup or honey onto hot pretzels, sprinkle with a mixture of ½ C granulated sugar and 2 tsp. ground cinnamon.

For raisin pretzel:
Add ¾ cup raisin
Replace the brown sugar with ½ cup mollases
