Eggroll

Kue ini sepupuan dengan kue semprong.. cuman lebih lembut. Mirip dengan kue eggroll yang dijual kalengan di oriental market yang harganya cukup menguras kantong. Satu resep ini jadinya sekitar 50 buah, kalau tidak perlu sebanyak itu.. lebih baik buat setengah resep saja. Resep ini aslinya adalah untuk membuat pizzele (dari foodnetwork.com) yang memang lebih tebal dari eggroll, jadi saya tambahkan 1 cup milk sehingga adonan menjadi lebih encer.

Ingredients:
6 eggs
1 1/2 cup sugar
3/4 cup butter, melted
2 cup cake flour
1 1/2 cup all-purpose flour
2 tsp baking powder
1 tsp vanila extract
1 cup milk

In a large bowl, beat eggs and sugar until thick. Stir in the melted butter and vanilla. Sift together the flour and baking powder, and blend into the batter. Add milk and keep stirring until smooth.
Heat the pizzelle iron, drop about one tablespoon of batter onto each circle on the iron. Bake for 40 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron, rool it using chopstick. Cool completely before storing in an airtight container.
