Shrimp dumpling (hakau udang)
Ingredients:
Filling:
1/2 lb shrimp
1 T tapioca starch
1 T sesame oil
1 tsp salt
1 tsp sugar
Dough:
1 C wheat starch
1/3 C tapioca starch
1/4 tsp white pepper
1/2 tsp salt
2 T vegetable oil
1 C boiling water
1. Wash the shrimp and squeeze out the excess moisture. Cut the shrimp in two and mix with the filling ingredients, until well combined.
2. Mix vegetable oil with boiling water. Add to the flour mixture and knead into a smooth dough. Divide into 20 equally sized portions. Flatten each portion of dough. Wrap 1 tsp filling inside each piece of dough. Arrange in a steamer and steam over high heat for 6 minutes.
Steamed beef balls
Ingredients
2 lb ground beef (lean)
2 oz beef fat cut in small pieces (optional)
1 C ice water
3 egg white
1 C cornstarch
2 T sesame oil
2 T garlic powder
2 tsp salt
3 T sugar
3 T oyster sauce
1 tsp white pepper
2 tsp baking soda
1/2 C chopped green onion
1/2 C chopped cilantro
