Pindahkan ke dalam panci. &lt;br /&gt;Masak santan, daun pandan dan garam hingga mendidih, angkat. Tuang ke atas ketan di dalam panci, aduk sampai santan terserap habis. Diamkan sampai agak dingin. &lt;br /&gt;Siapkan daun pisang rangkap dua, bungkus aron beras ketan seperti membuat lontong. Favourite saya siomay Istiqomah, jualannya di samping Mesjid Istiqamah Bandung, sauce kacangnya pedas nian ditambah kerupuk warung wahhh.... sepiring minta nambah deh.&lt;br /&gt;&lt;br /&gt;Nah di bawah ini, justru resep siomay Hasbrouck he.he...&lt;br /&gt;&lt;br /&gt;Bahan bakso-tahu dan siomay &lt;br /&gt;&lt;br /&gt;Adonan ikan:&lt;br /&gt;1 lb fish paste (chacha)&lt;br /&gt;1/2 lb ground chicken&lt;br /&gt;1 teaspoon (tsp)garlic powder&lt;br /&gt;1 tsp salt&lt;br /&gt;1/2 tsp white pepper powder &lt;br /&gt;2 tsp sugar&lt;br /&gt;2 white egg telur&lt;br /&gt;1 tablespoon (T) vegetable oil&lt;br /&gt;1/2-1 C tapioca starch&lt;br /&gt;2 green onion, chopped &lt;br /&gt;&lt;br /&gt;Bahan lain:&lt;br /&gt;Wonton skin (kulit pangsit)&lt;br /&gt;Firm tofu &lt;br /&gt;Pare, green cabbage, yukon potatoes&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cara membuat:&lt;br /&gt;- Dengan menggunakan mixer, aduk fish paste dan daging ayam cincang dengan bumbu-bumbu halus, tambahkan telur,vegetable oil, aduk rata.&lt;br /&gt;- Tambahkan tapioca starch, chopped green onion, aduk rata lagi, sisihkan.&lt;br /&gt;- Untuk siomay: ambil satu kulit pangsit, tambahkan 1 sendok makan adonan ikan, bentuk sesuai selera. Kukus sampai matang selama 20 menit.&lt;br /&gt;- Untuk pare: potong melintang setebal 2 cm, buang bijinya, rendam dalam air garam selama 30 menit. Cuci bersih, tiriskan. Isi dengan adonan ikan. Kukus sampai matang. &lt;br /&gt;- Untuk bakso tahu: ambil tahu putih, potong berbentuk segitiga. Keluarkan sedikit isi tahu, isi dengan adonan ikan. Kukus sampai matang.&lt;br /&gt;- Kol: buang tulang daun, rendam dalam air mendidih sampai layu. Bikin pecel lele ah, yang memang termasuk jajanan favourite jaman kuliah di Bandung dulu.&lt;br /&gt;Walaupun udah lama ga bikin tapi masih inget caranya, gampang kok. Tapi sayang disini tidak ada daun kemangi, jadi lalapan cukup pake terung hijau dan mentimun aja.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;4 ekor ikan lele ukuran sedang, bersihkan,&lt;br /&gt;kalau ikan terlalu besar dipotong dua,&lt;br /&gt;buat 2-3 keratan tipis setiap sisi badan ikan.&lt;br /&gt;&lt;br /&gt;Minyak untuk menggoreng&lt;br /&gt;&lt;br /&gt;Bumbu perendam:&lt;br /&gt;1 sdt ketumbar bubuk&lt;br /&gt;1/2 sdt kunyit bubuk&lt;br /&gt;4 siung bawang putih, haluskan&lt;br /&gt;2 sdt garam halus&lt;br /&gt;1/2 jeruk nipis, ambil airnya.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Sambal Pecel:&lt;br /&gt;Goreng dengan 5 sdm minyak goreng:&lt;br /&gt;3 buah cabe merah, buang biji(supaya tidak terlau pedas)&lt;br /&gt;3 buah cabe rawit&lt;br /&gt;2 buah tomat plum&lt;br /&gt;4 siung bawang putih&lt;br /&gt;3 siung bawang merah&lt;br /&gt;6 buah kemiri&lt;br /&gt;&lt;br /&gt;1  sdt terasi bakar&lt;br /&gt;1/2 sdt kencur bubuk&lt;br /&gt;1 sdt garam&lt;br /&gt;2 sdt gula pasir&lt;br /&gt;1/2 - 1 sdt air jeruk nipis&lt;br /&gt;&lt;br /&gt;Cara Membuat:&lt;br /&gt;1. Campur lele dengan bumbu perendam. Biarkan sejam atau semalaman agar bumbu meresap.&lt;br /&gt;2. Panaskan minyak, goreng lele hingga matang dan kering. Angkat, tiriskan.&lt;br /&gt;3. Sambal Pecel Lele: masukkan semua bahan sambal ke dalam chopper atau hand blender, haluskan, aduk rata.&lt;br /&gt;4. Siap disantap selagi ikan masih hangat. Padahal di Bandung cukup terkenal… kuahnya yang kental, kangkung dan tauge yang renyah, kadang ditambah babat… wah seporsi enggak cukup deh. &lt;br /&gt;&lt;br /&gt;Sumber: Primarasa, tapi tentu saja dimodifikasi sesuai bahan yang ada disini. &lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;1 bungkus mie telur segar atau mie kering, rebus, tiriskan&lt;br /&gt;¼ ikat  kangkung, ambil bagian daun saja , dan cuci bersih&lt;br /&gt;½ bungkus tauge (1/2 lb)&lt;br /&gt;1 bungkus bakso sapi (15 buah)&lt;br /&gt;1 kaleng telur puyuh (optional)&lt;br /&gt;½ lb babat, rebus sampai empuk (optional)&lt;br /&gt;&lt;br /&gt;Saus:&lt;br /&gt;8 cup air&lt;br /&gt;1 dada ayam, potong dadu&lt;br /&gt;1 potong kaldu blok ayam&lt;br /&gt;1 sdm vegetable oil untuk menumis&lt;br /&gt;2 sdm kecap asin&lt;br /&gt;1 sdm kecap manis&lt;br /&gt;3 sdm tepung kanji, larutkan dalam sedikit air&lt;br /&gt;2 butir telur&lt;br /&gt;1 batang daun bawang, iris halus&lt;br /&gt;1 sdm kecap manis&lt;br /&gt;2 sdm kecap asin&lt;br /&gt;3 sdm tepung kanji larutkan dengan sedikit air&lt;br /&gt;1 sdm vegetable oil untuk menumis &lt;br /&gt;8 cup air&lt;br /&gt;&lt;br /&gt;Bumbu halus:&lt;br /&gt;1 sdm udang kering/ ebi, rendam air panas hingga mengembang dan tiriskan&lt;br /&gt;6 butir bawang merah&lt;br /&gt;3 siung bawang putih&lt;br /&gt;1 sdt merica utuh/halus&lt;br /&gt;1 ½ sdt garam&lt;br /&gt;&lt;br /&gt;Sambal cabe rawit:&lt;br /&gt;10 buah cabe rawit&lt;br /&gt;1 siung bawang putih&lt;br /&gt;½ sdt garam&lt;br /&gt;1 sdm air&lt;br /&gt;Rebus cabe rawit dan bawang putih, haluskan, tambahkan garam dan air. &lt;br /&gt;&lt;br /&gt;Bahan pelengkap:&lt;br /&gt;bawang goreng &lt;br /&gt;jeruk nipis, potong kecil&lt;br /&gt;sambal cabe rawit&lt;br /&gt;&lt;br /&gt;Cara membuat:&lt;br /&gt;-Rebus mie dalam air mendidih sampai matang, tiriskan. &lt;br /&gt;-Siram daun kangkung dengan air panas, tiriskan&lt;br /&gt;-Siram tauge dengan air panas, tiriskan&lt;br /&gt;-Didihkan 8 cup air,masukkan daging ayam. Rebus hingga masak. Masukkan kaldu blok.&lt;br /&gt;-Tumis bumbu halus dan daun bawang hingga harum, masukkan ke dalam kaldu. &lt;br /&gt;-Tambahkan kecap asin, kecap manis.&lt;br /&gt;-Setelah mendidih, tambahkan larutan tepung kanji. Saking sudah sering bikin jadinya asal maen campur aja, biasa pake ilmu "secukupnya". Kali ini dicatat deh, soalnya banyak yang nanya sih.... Sebagai catatan saya menggunakan frozen fish paste (lihat gambar) sebagai pengganti ikan tenggiri yang memang susah didapat disini. Tapi pengen renyah seperti yang dijual abang-abang itu ... ternyata susah lho. Sudah mencoba berbagai kombinasi tetap belum puas, yang ini sepertinya sudah cukup renyah... tapi tetap aja hanya bertahan sejam, setelah itu tidak kriuk-kriuk lagi deh. &lt;br /&gt;&lt;br /&gt;1 1/2 C rice flour&lt;br /&gt;1/2 C all purpose flour&lt;br /&gt;1/2 tsp baking powder&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1 T sugar powder&lt;br /&gt;1/4 C coconut milk&lt;br /&gt;3/4 C water&lt;br /&gt;5 ripe plantains&lt;br /&gt;&lt;br /&gt;Combine flour, baking powder, salt, sugar in large bowl. &lt;br /&gt;Add coconut milk and gradually blend in water, beating with a whisk until smoooth. &lt;br /&gt;Peel plantains. Cut each plantain into 5-6 pieces. &lt;br /&gt;Heat oil in frying pan over medium heat. &lt;br /&gt;Dip plaintain pieces in flour mixture, coating completely.&lt;br /&gt;Cook 6-8 pieces at a time (depend on pan size) until golden brown. &lt;br /&gt;Drain on paper towel. Tapi ternyata sukses tuh.. walaupun prosesnya jauh lebih lama daripada membuat roti manis biasa tapi dijamin tidak akan menyesal... rotinya empuk dan rasanya gurih karena menggunakan banyak telur dan butter. Resep asli dari "Bread" by Ingram and Shapter.  &lt;br /&gt;&lt;br /&gt;3 1/2 C bread flour&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1 T instant yeast&lt;br /&gt;1/2 C warm milk&lt;br /&gt;2 eggs&lt;br /&gt;2 egg yolks&lt;br /&gt;1/3 C sugar&lt;br /&gt;2/3 C butter, softened&lt;br /&gt;1 C raisin&lt;br /&gt;melted butter, for brushing. &lt;br /&gt;&lt;br /&gt;1. using a double layer of parchment paper, line and butter a 6-inch deep spring form pan. Leave 3 inches of paper above the top of the pan.&lt;br /&gt;2. In a large mixing bowl combine 1 C of the flour and the yeast. Add the whole eggs, salt, sugar and milk. Beat with an electric mixer on low to medium speed to make a thick batter. Cover and let in a warm place for 30 minutes. &lt;br /&gt;3. Add the egg yolk, butter and the remaining of flour. Place in a lightly oiled bowl, cover with plastic wrap and let rise for 2-3 hrs or until double in bulk. &lt;br /&gt;4. Punch down the dough and turn out onto a lightly floured surface. Gently knead in the raisins. Shape into a ball and place in the prepared pan. Cover with plastic wrap and let rise for about 1-2 hr. &lt;br /&gt;5. Preheat the oven to 375F. Brush deh surface with melted butter and cut a cross in the top using a sharp knife. Bake for 20  minutes, then reduce the oven temperature to 350F. Supaya rasa coklatnya lebih kuat, sebaiknya coklat bubuk dilarutkan dengan air panas sebelum dicampur dengan adonan. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients: &lt;br /&gt;1 c butter (room temperature)&lt;br /&gt;2 1/2 c sugar&lt;br /&gt;2 tsp vanilla extract or 1 tsp almond extract&lt;br /&gt;6 eggs&lt;br /&gt;2 c cake flour&lt;br /&gt;1 c all purpose flour&lt;br /&gt;1/2 tsp baking soda&lt;br /&gt;1 1/2 tsp baking powder&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1 C sour cream&lt;br /&gt;3 T cocoa powder mix with 3 T hot water  &lt;br /&gt;&lt;br /&gt;1. In a small bowl, mix baking soda with sour cream, set aside. In a medium bowl sift together cake flour, all purpose flour, baking powder and salt, set aside. &lt;br /&gt;2. In large mixing bowl beat butter on low to medium speed about 30 second. Add sugar and vanillla; beat until fluffy. Add eggs one at a time, beating on low to medium speed 1 minute after each addition and scraping bowl frequently. Alternately add flour mixture and sour cream to butter mixture, beating on low speed after each addition just until combined. Reseve 2 cups batter. Pour remaining batter into bundt pan.&lt;br /&gt;3. In a small mixing bowl combine chocolate and reserved 2 cups batter. Pour chocolate batter over vanilla batter in pan. Using a fork, swirl the batter to form marble pattern. &lt;br /&gt;4. Bake in a 350 oven  about 50 minutes. Angkat dan sisihkan.&lt;br /&gt;Didihkan santan bersama garam dan daun pandan, lalu masukkan beras ketan yang sudah dikukus. Aduk sampai rata dan santan terserap oleh beras ketan. &lt;br /&gt;Kukus kembali beras ketan selama 15 menit. &lt;br /&gt;Campur nasi ketan dengan kelapa parut kukus. Mirip dengan kue eggroll yang dijual kalengan di oriental market yang harganya cukup menguras kantong. Satu resep ini jadinya sekitar 50 buah, kalau tidak perlu sebanyak itu.. lebih baik buat setengah resep saja. Resep ini aslinya adalah untuk membuat pizzele (dari foodnetwork.com) yang memang lebih tebal dari eggroll, jadi saya tambahkan 1 cup milk sehingga adonan menjadi lebih encer.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;6 eggs&lt;br /&gt;1 1/2 cup sugar&lt;br /&gt;3/4 cup butter, melted&lt;br /&gt;2 cup cake flour&lt;br /&gt;1 1/2 cup all-purpose flour&lt;br /&gt;2 tsp baking powder&lt;br /&gt;1 tsp vanila extract&lt;br /&gt;1 cup milk&lt;br /&gt;&lt;br /&gt;In a large bowl, beat eggs and sugar until thick. Stir in the melted butter and vanilla. Sift together the flour and baking powder, and blend into the batter. Add milk and keep stirring until smooth. &lt;br /&gt;Heat the pizzelle iron, drop about one tablespoon of batter onto each circle on the iron. Bake for 40 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron, rool it using chopstick. Cuci bersih kaki ayam, potong dua. Supaya bakso kenyal, begitu diangkat langsung celupkan ke dalam air es, biarkan selama 5 menit, setelah itu baru ditiriskan. &lt;br /&gt;&lt;br /&gt;Bahan bakso urat:&lt;br /&gt;2 lb daging sapi giling &lt;br /&gt;1/2 lb urat sapi (tendon) potong kecil-kecil &lt;br /&gt;2 sdt garlic powder &lt;br /&gt;2 sdm saus tiram&lt;br /&gt;1 sdt merica &lt;br /&gt;1/2 lb tepung kanji. &lt;br /&gt;2 putih telur&lt;br /&gt;2 cup es serut&lt;br /&gt;&lt;br /&gt;Sediakan:&lt;br /&gt;Air panas/ mendidih untuk merebus bakso &lt;br /&gt;Air dingin/air es untuk merendam bakso matang &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cara membuat:&lt;br /&gt;1. Masukkan daging giling dan 1 cup es serut kedalam food processor, giling hingga halus&lt;br /&gt;2. Pindahkan daging yang sudah halus ke dalam bowl untuk mixer.&lt;br /&gt;3. Tambahkan urat sapi, bumbu, putih telur, 1 cup es serut dan tepung kanji.&lt;br /&gt;4. Dengan menggunakan mixer (Kitchen aid with hook attachment), campur semua bahan sampai teraduk rata dan tidak melekat di bowl.  &lt;br /&gt;5. Cara membentuk bakso dengan menggunakan tangan dan sendok. Basahkan tangan dengan air atau pakai sarung tangan plastik, ambil sedikit adonan bakso dengan tangan kiri, dan genggam sampai adonan keluar. Ambil bulatan bakso dengan sendok dan masukkan ke dalam air mendidih, masak sampai mengapung lalu pindahkan ke dalam mangkok berisi air es selama 5 menit. Angkat dan tiriskan. &lt;br /&gt;6. Ulangi step 5 sampai semua adonan habis.&lt;br /&gt;&lt;br /&gt;Bahan bakso tahu dan bakwan&lt;br /&gt;1 lb fish paste (chacha)&lt;br /&gt;1 sdt garlic powder&lt;br /&gt;1/2 sdt merica&lt;br /&gt;1 sdt gula pasir&lt;br /&gt;1 putih telur&lt;br /&gt;1/2 C tapioca starch&lt;br /&gt;2 batang daun bawang iris halus&lt;br /&gt;kulit pangsit secukupnya&lt;br /&gt;tahu putih atau tahu goreng&lt;br /&gt;&lt;br /&gt;Cara membuat:&lt;br /&gt;- Dengan menggunakan mixer, aduk semua bahan sampai rata&lt;br /&gt;- Untuk bakwan: ambil kulit pangsit, tambahkan 1 sdt adonan ikan, lipat dan gulung.Goreng sampai matang dan kecoklatan. &lt;br /&gt;- Untuk bakso tahu: ambil tahu putih atau tahu goreng, potong berbentuk segitiga. Keluarkan sedikit isi tahu, isi dengan adonan ikan. Mestinya kan berbentuk segitiga penuh (limas), saya sih jadinya segitiga gepeng he.he…Tapi ternyata di youtube banyak tuh video cara membuat bacang alias rice dumpling. Jadi deh.. bikin lagi.. sekarang sih sukses... segitiga limasnya sudah keluar he.he..&lt;br /&gt;&lt;div&gt;Saya minta Zaki ambil photo pas saya membungkus... kurang begitu jelas tapi lumayanlah. Untuk yang berminat silahkan diikuti step by step membungkus bacang, dijamin berhasil deh..&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;&lt;br /&gt;Beras:&lt;br /&gt;5 cup beras jasmine rendam 30 menit&lt;br /&gt;3 siung bawang putih dicincang&lt;br /&gt;2 sdt garam&lt;br /&gt;4 sdm minyak goreng&lt;br /&gt;1 sdm kecap asin&lt;br /&gt;2 1/2 cup air&lt;br /&gt;&lt;br /&gt;Isi:&lt;br /&gt;1 1/2 lb daging sapi giling&lt;br /&gt;1 buah bawang Bombay diiris halus&lt;br /&gt;3 btg daun bawang iris halus&lt;br /&gt;2 sdm kecap asin&lt;br /&gt;6 sdm kecap manis&lt;br /&gt;2 sdm saus tiram&lt;br /&gt;1 sdt minyak wijen&lt;br /&gt;1 sdt garam&lt;br /&gt;2 sdt gula&lt;br /&gt;1 sdt merica bubuk&lt;br /&gt;5 butir bawang merah, cincang halus&lt;br /&gt;4 siung bawang putih, cincang halus&lt;br /&gt;2 sdm minyak untuk menumis&lt;br /&gt;1 sdm tepung maizena larutkan dengan 2 sdm air&lt;br /&gt;&lt;br /&gt;Pembungkus:&lt;br /&gt;Daun bambu kering, bisa dibeli di oriental market (lihat gambar). Daun bambu ini sudah bersih jadi cukup direndam air panas (minimal sejam), tiriskan.&lt;br /&gt;&lt;br /&gt;Cara:&lt;br /&gt;Untuk beras:&lt;br /&gt;Tumis bawang putih dengan minyak sampai kuning dan harum, masukan beras, tambahkan kecap asin dan garam. Aduk rata, tambahkan air, masak terus sampai air terserap habis dan beras menjadi aron.&lt;br /&gt;&lt;br /&gt;Untuk isi:&lt;br /&gt;Tumis bawang merah dan bawang putih sampai harum, lalu tambahkan daging dan bumbu lain, masak terus sampai daging matang dan kering. Tambahkan larutan sagu.&lt;br /&gt;&lt;br /&gt;Penyelesaian:&lt;br /&gt;Ambil 2 lembar daun bambu, letakan saling menumpuk,lalu ditekuk untuk membentuk contong kecil. Isikan 2 sdm beras aron, masukkan 1 sdm bahan isi, tutup lagi dengan 3sdm beras aron. Bungkus bacang dengan rapi, lihat step by step cara membungkus bacang. Ikat dengan benang katun. Rebus bacang selama 2 jam, dijaga supaya bacang terus terendam air.&lt;br /&gt;Angkat dan dinginkan, sebaiknya simpan didalam colander sehinggak air bisa menetas kebawah. Dimakan setelah hangat.Bacang ini kalau disimpan di refridge tahan lho sampai seminggu. Tapi... pucuk dicinta ulam tiba, salah seorang teman di Houston kebetulan punya grain mill, alat untuk membuat tepung, jadilah.. saya dibuatkan tepung ketan item. Sekalian dicopy-kan resepnya juga. Makasih ya Budi..&lt;br /&gt;Tapi resep disini sudah dimodifikasi jadi tidak perlu pake timbangan lagi.... lebih gampang kan...&lt;br /&gt;&lt;br /&gt;Bahan 1:&lt;br /&gt;5 butir putih telur&lt;br /&gt;3/4 cup gula pasir&lt;br /&gt;1/2 sdt garam&lt;br /&gt;1/2 sdt cream of tartar (optional)&lt;br /&gt;&lt;br /&gt;Bahan 2:&lt;br /&gt;5 butir kuning telur&lt;br /&gt;1/2 cup santan&lt;br /&gt;1/3 cup vegetable oil&lt;br /&gt;1 cup tepung ketan item&lt;br /&gt;1 sdt baking powder&lt;br /&gt;&lt;br /&gt;caranya: persis seperti membuat cake pandan&lt;br /&gt;- Panaskan oven 350F&lt;br /&gt;- Kocok putih telur dengan cream of tartar dan garam sampai mengembang, tambahkan gula pasir sedikit demi sedikit, kocok sampai kaku.&lt;br /&gt;- Dalam wadah lain: aduk tepung ketan item, baking powder. Lubangi tengahnya, masukkan kuning telur dan minyak, aduk menggunakan whisk, tambahkan santan sedikit demi sedikit sampai adonan tercampur rata.&lt;br /&gt;- Campurkan putih telur kocok kedalam adonan tepung sedikit demi sedikit. Supaya gampang setelah dibumbui ayam dipanggang di dalam oven, tapi kalau mau rasanya lebih mantap, panggang ayam di atas bara api (charcoal) sambil diolesi bumbu.&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;1 ekor ayam ukuran sedang atau 8 chicken leg quarter, potong2&lt;br /&gt;4 lbr daun salam&lt;br /&gt;1 cm lengkuas iris-iris&lt;br /&gt;2 lbr daun jeruk&lt;br /&gt;1 btg serai, potong-potong 3 cm&lt;br /&gt;1/2 kaleng santan kental&lt;br /&gt;3 sdm minyak, untuk menumis&lt;br /&gt;&lt;br /&gt;Bumbu halus:&lt;br /&gt;6 buah cabe merah, buang bijinya supaya tidak pedas&lt;br /&gt;10 bawang merah&lt;br /&gt;4 bawang putih&lt;br /&gt;8 kemiri&lt;br /&gt;2 cm jahe&lt;br /&gt;1 cm kunyit&lt;br /&gt;1/2 sdt terasi matang&lt;br /&gt;2 sdt garam (kira-kira)&lt;br /&gt;1 sdm gula merah&lt;br /&gt;2 sdt kecap manis&lt;br /&gt;1 jumput asam jawa, larutkan dgn air&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cara membuat:&lt;br /&gt;Cuci ayam, lumuri dengan air jeruk nipis dan garam, diamkan beberapa saat.&lt;br /&gt;Tumis bumbu halus bersama daun salam, lengkuas, serai dan daun jeruk hingga harum.&lt;br /&gt;Masukkan ayam, aduk hingga berubah warna. Masukkan sisa bumbu.&lt;br /&gt;Tuang santan kedalamnya.&lt;br /&gt;Didihkan sambil sesekali diaduk agar tidak pecah.&lt;br /&gt;Masukkan potongan ayam dalam pinggan tahan panas berikut bumbunya. Supaya warna merah cantik, pilihlah cabe merah yang sudah benar-benar merah.. kalau tidak ada boleh campur sedikit dengan sambal oelek.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;1 buah nanas&lt;br /&gt;1 buah bengkuang (jicama)&lt;br /&gt;1 buah mangga muda&lt;br /&gt;1 buah apple hijau&lt;br /&gt;1 buah mentimun&lt;br /&gt;kol dan toge secukupnya&lt;br /&gt;&lt;br /&gt;bumbu:&lt;br /&gt;1 sdm ebi kering, rendam air hangat&lt;br /&gt;5 buah cabe merah&lt;br /&gt;1 cup gula pasir&lt;br /&gt;1 sdm garam&lt;br /&gt;5 cup air&lt;br /&gt;3 sdm vinegar&lt;br /&gt;&lt;br /&gt;cara:&lt;br /&gt;- kupas dan potong-potong buah sesuai selera&lt;br /&gt;- iris tipis kol&lt;br /&gt;- campur 4 cup air dingin dengan garam dan vinegar, masukan potongan buah dan sayur.Sisihkan.&lt;br /&gt;- Haluskan ebi dan cabe merah.&lt;br /&gt;- Rebus 1 cup air dengan gula pasir, aduk hingga gula larut. Masukan campuran ebi dan cabe halus, aduk sampai mendidih. Sayang kami yang sudah lama tidak pulang kampung cuman bisa dengar ceritanya aja. Eh, tapi kemaren teman baik saya mbak EK bawain oleh-oleh dari Bandung, salah satunya ya itu brownies, wah asyiiik bisa dijadikan contoh nih. Setelah search sana-sini akhirnya pilihan jatuh pada resep dari Ny. Liem tapi dibuat lebih sederhana, terdiri dari dua lapis dan ditengahnya ditaburi meisjes.&lt;br /&gt;Hasilnya ok banget,... mirip sekali deh dengan aslinya.&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;telur 6 butir (ukuran large)&lt;br /&gt;Gula 1 cup (240 gr) &lt;br /&gt;Vanila 1 sdt&lt;br /&gt;Garam 1/4 sdt&lt;br /&gt;Emulsifier 1/2 sdt&lt;br /&gt;1 sdt baking powder&lt;br /&gt;Terigu 1 cup (125 gr)&lt;br /&gt;Coklat bubuk 50 gr&lt;br /&gt;Canola oil 175 ml&lt;br /&gt;Chocolate baking 100 gr&lt;br /&gt;&lt;br /&gt;Cara: &lt;br /&gt;1. Lelehkan chocolate baking, campur dengan canola oil&lt;br /&gt;2. Ayak tepung terigu, coklat bubuk dan baking powder&lt;br /&gt;3. Kocok telur, gula, emulsifier dan vanila sampai mengembang.&lt;br /&gt;4. Masukan campuran tepung sedikit demi sedikit&lt;br /&gt;5. Tambahkan campuran coklat leleh dan oil, aduk sampai rata.&lt;br /&gt;6. Tuang setengah adonan kedalam loyang yang telah dialasi parchment paper (kertas roti). Kukus selama 10 menit dengan api besar.&lt;br /&gt;7. Tambahkan coklat sprinkler (meisjes)&lt;br /&gt;8. Tuangkan sisa adonan.&lt;br /&gt;9. Bentuk bulatan sebesar kelereng, goreng dengan api kecil sampai kecoklatan. Oh boy!&lt;br /&gt;Gara-gara ada beberapa teman yang baru pulang dari Jakarta pada cerita soal Rotiboy, jadi penasaran deh. Katanya enak sekali apalagi kalau dimakan hangat-hangat. &lt;br /&gt;Kita bikin yuuu!&lt;br /&gt;Supaya gampang dan tidak perlu coba-coba resep baru, untuk rotinya saya pakai resep roti manis biasa. Untuk filling cukup pake unsalted butter dipotong-potong kotak kecil. Nah topping-nya ini yang belum kebayang, terpaksa deh cari-cari dulu. Setelah banding-banding akhirnya milih resep ini karena bahannya paling simple dan kebetulan semuanya ada. Membuatnya gampang sekali hanya harus hati-hati saat menggoreng, waspada kalau terjadi letusan!&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;1 cup wijen&lt;br /&gt;minyak untuk menggoreng&lt;br /&gt;&lt;br /&gt;Isi:&lt;br /&gt;1 cup kacang hijau kupas, rendam dalam air hangat selama 3 jam&lt;br /&gt;1 lembar daun pandan&lt;br /&gt;1 tsp vanilla &lt;br /&gt;1/2 cup gula pasir, tambahkan secukupnya bila dirasa kurang manis&lt;br /&gt;&lt;br /&gt;Kulit:&lt;br /&gt;2 1/2 cup tepung mochiko (tepung beras ketan)&lt;br /&gt;3 tbs tepung kanji&lt;br /&gt;1 cup air&lt;br /&gt;1/2 cup gula&lt;br /&gt;1/2 tsp garam&lt;br /&gt;1 tsp air kapur sirih (optional)&lt;br /&gt;&lt;br /&gt;Cara:&lt;br /&gt;1. Isi: Kukus kacang hijau dan daun pandan sampai empuk (kira-kira 20 menit). Masukkan dalam panci, campur dengan gula dan vanilla, aduk terus sampai adonan kalis. Setelah dingin bentuk bulat-bulat kecil, sisihkan. &lt;br /&gt;&lt;br /&gt;2. Kulit: Rebus air dan gula sampai larut. Campur tepung mochiko dan tepung kanji, tambahkan air gula dan uleni sampai rata. Gulung adonan membentuk roll panjang, potong menjadi 20 bagian. &lt;br /&gt;3. Ambil 1 bagian adonan kulit, pipihkan, taruh 1 bulatan isi diatasnya, tutup lalu bulatkan. Celupkan ke dalam air, lalu gulingkan kedalam wijen sampai menempel di seluruh permukaan.  &lt;br /&gt;4. Goreng dalam minyak hangat (jangan panas) sampai berwarna kecoklatan. Membuatnya gampang-gampang susah, gampang kalau sudah tahu trick untuk mencampur adonan putih telur dan adonan tepung. Dan jangan lupa untuk membalik loyang langsung setelah keluar dari oven. Resep asli dari Primarasa tapi dimodifikasi sedikit supaya hasilnya lebih lembut.&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;7 putih telur&lt;br /&gt;200 gr gula pasir&lt;br /&gt;7 kuning telur&lt;br /&gt;200 gr tepung terigu (all purpose flour)&lt;br /&gt;2 sdt baking powder&lt;br /&gt;1/4 sdt baking soda&lt;br /&gt;50 ml vegetable oil&lt;br /&gt;200 ml santan (diganti air juga ok)&lt;br /&gt;extract pandan (kira-kira saja)&lt;br /&gt;&lt;br /&gt;Cara:&lt;br /&gt;- Panaskan oven 350F&lt;br /&gt;- Kocok putih telur dengan cream of tartar dan garam sampai mengembang, tambahkan gula pasir sedikit demi sedikit, kocok sampai kaku.&lt;br /&gt;- Dalam wadah lain: aduk tepung terigu, baking powder, baking soda. Lubangi tengahnya, masukkan kuning telur dan minyak, aduk menggunakan whisk, tambahkan santan sedikit demi sedikit sampai adonan tercampur rata. &lt;br /&gt;- Campurkan putih telur kocok kedalam adonan tepung sedikit demi sedikit. Isi bisa disesuaikan dengan selera, bisa kacang hijau, kacang merah, ayam ataupun daging sapi. Kemaren kebetulan praktek membuat bakpao rame-rame, heboh sekali 20 orang datang. Allow to rise for 1 hr.&lt;br /&gt;(2) Mix in the dough ingredients to (1) and knead until smooth. Let stand for 15 minutes. Divide into 30 gr portions.&lt;br /&gt;(3) Wrap one tablespoon of filling in each piece of dough, let stand for another 15 minutes. Rasanya memang gurih karena tambahan mentega banyak sekali, yang menurut saya sih kebanyakan. Ini versi yang kurang lebih sama tapi lebih simple, hopefully lebih sehat.&lt;/div&gt;&lt;br /&gt;Martabak Manis&lt;br /&gt;Ingredients:&lt;br /&gt;1 3/4 C all purpose flour &lt;br /&gt;1/2 tsp baking powder&lt;br /&gt;1   tsp yeast&lt;br /&gt;1/4 tsp sea salt&lt;br /&gt;1/3 C sugar&lt;br /&gt;1 C coconut milk (warm)&lt;br /&gt;2 egg&lt;br /&gt;1/2 sdt vanilla extract&lt;br /&gt;1/4 sdt baking soda&lt;br /&gt;&lt;br /&gt;Topping:  &lt;br /&gt;Butter&lt;br /&gt;Condensed milk&lt;br /&gt;Roasted peanut, coarse&lt;br /&gt;Shredded cheddar cheese &lt;br /&gt;Chocolate sprinkler (muisjes)&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;1. Campur semua bahan (kecuali baking soda), aduk rata dengan mixer. &lt;br /&gt;2. Simpan di tempat yang hangat. Tunggu hingga mengembang dan berbuih, minimal 1 jam. &lt;br /&gt;3. Sebelum dimasak, masukkan baking soda, aduk rata.&lt;br /&gt;4. Panaskan wajan tebal ukuran 10", olesi dengan butter. Tuang adonan ke dalam wajan, kira-kira setinggi 1/2". Tunggu hingga adonan berlubang-lubang, tutup wajan dan kecilkan apinya. &lt;br /&gt;5. Setelah adonan matang dan permukaannya tidak basah segera angkat martabak dari wajan dengan bantuan spatula yang lebar. &lt;br /&gt;6. Beri susu kental manis, taburi kacang tumbuk dan coklat muisjes, beri susu kental manis sekali lagi. Taburan hanya untuk satu sisi saja.&lt;br /&gt;7. Belah martabak menjadi 2 bagian yang sama besar, kemudian lipat, olesi permukaan dengan margarine/butter. &lt;br /&gt;8. Mendingan juga buat di rumah, jadinya banyak ha.ha...&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Zaki lebih pintar dari saya untuk membentuk pretzel (seperti angka delapan), tangannya terampil sekali...yang ditampilkan disini hasil karya dia.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;Soft pretzel&lt;br /&gt;Ingredients, for 12.&lt;br /&gt;3 ½ C of bread flour&lt;br /&gt;4 T brown sugar + 2 T sugar &lt;br /&gt;1 tsp. sea salt &lt;br /&gt;1 T yeast&lt;br /&gt;1/3 C warm milk&lt;br /&gt;2/3 C warm water &lt;br /&gt;2 T butter,melted &lt;br /&gt;&lt;br /&gt;2 T baking soda mixed with 1 cup hot water in a small bowl for water soda solution &lt;br /&gt;1 egg yolk + 1 T milk beaten  in a small bowl &lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;1. In a large mixing bowl, mix together 3 C flour, yeast, brown sugar and salt. &lt;br /&gt;Add water gradually and beat with an electric mixer on low speed 30 second, scraping bowl constanly. Beat on medium speed for about 3 minutes until the dough is soft.  &lt;br /&gt;2. Turn dough out onto a lightly floured surface and knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (about 5 minutes).&lt;br /&gt;Form into a ball and place in a lightly greased bowl, cover with plastic wrap, and allow to rise in a warm place for 1 hour.&lt;br /&gt;3. When dough is risen enough, punch down and turn dough out onto a lightly floured surface. Make dough into a smooth rectangle shape and let rest for 10 min.  Using pizza cutter cut dough lengthwise into twelve 1-inch strips. Roll each piece into a rope, very thin, a little bigger than a pencil. Shape into an upside down U shape on your table. Bring the ends together and twist them. Flatten the ends and bring to the top of the pretzel and press in the dough to secure making it look like a pretzel. Allow pretzel to sit for about 1-2 min. &lt;br /&gt;4. Dip in the water-soda solution. Place on a greased cookie sheet. Brush with beaten egg yolk. Dengan menggunakan mixer (hook attachment), aduk bahan A hingga rata lalu istirahatkan selama 90 menit di tempat hangat. Bahan A ini masih lembek dan lengket. &lt;br /&gt;2. Campur adonan A dengan bahan B lalu uleni hingga kalis selama 10 menit. Istirahatkan kembali di tempat hangat selama 30 menit. &lt;br /&gt;3. Gilas tipis adonan setebal kurang lebih 1 cm diatas tempat yang sudah ditaburi tepung terigu tipis-tipis, diamkan 10 menit lalu cetak dengan cetakan bentuk donat, diamkan kembali selama 10 menit.&lt;br /&gt;4. Goreng donat dalam canola oil dengan api kecil saja hingga berwarna kuning kecoklatan, angkat dan tiriskan di atas paper towel. &lt;br /&gt;5. Rasa cendolnya itu khas sekali, beraroma daun pandan dan daun suji, santan yang sangat kental dan manis gula-jawa asli tanpa pemanis tambahan.&lt;br /&gt;Resep disini hasil coba-coba, mereka-reka komposisi berbagai tepung sehingga diperoleh kekenyalan yang diinginkan. Oh ya air kapur sirih jangan sampai terlewatkan, tanpa ini cendol tidak akan kenyal.&lt;br /&gt;&lt;br /&gt;Bahan Cendol:&lt;br /&gt;3 cup air &lt;br /&gt;½ sendok teh ekstract pandan &lt;br /&gt;3/4 cup tepung hunkue (mung bean starch)&lt;br /&gt;3 sendok makan tepung beras&lt;br /&gt;2 sendok makan tepung kanji&lt;br /&gt;1 sendok teh air kapur sirih&lt;br /&gt;&lt;br /&gt;Kuah santan:&lt;br /&gt;1 kaleng santan&lt;br /&gt;1/2 cup air&lt;br /&gt;½ sdt garam&lt;br /&gt;1 lembar daun pandan, potong-potong &lt;br /&gt;&lt;br /&gt;Sirop Gula Merah:&lt;br /&gt;250 g gula merah&lt;br /&gt;1/2 cup gula pasir&lt;br /&gt;3/4 cup air&lt;br /&gt;1/2 nangka kaleng, potong kecil (optional)&lt;br /&gt;&lt;br /&gt;Cara membuat:&lt;br /&gt;•  Cendol: campur ketiga macam tepung,garam, air kapur sirih,  extract pandan dengan 1 cup air &lt;br /&gt;•  Masak sisa air hingga hampir mendidih.&lt;br /&gt;•  Masukkan larutan tepung sambil aduk cepat hingga bening dan matang. Angkat.&lt;br /&gt;•  Siapkan cetakan cendol , taruh di atas wadah berisi air es. Tuangkan adonan panas ke atas cetakan, tekan hingga butiran cendol jatuh dan terendam air es. &lt;br /&gt;•  Lakukan berulang-ulang sampai seluruh adonan habis. &lt;br /&gt;   Tiriskan, rendam dalam air matang dingin. Sisihkan.&lt;br /&gt;•  Kuah: Rebus santan bersama semua bahan hingga mendidih. Angkat, dinginkan. &lt;br /&gt;•  Sirop Gula Merah: Rebus gula merah, gula pasir, dan air hingga mendidih dan kental. Angkat, beri nangka, dinginkan.&lt;br /&gt;•  Penyajian: Taruh cendol di gelas-gelas saji. Resep disini sudah dimodifikasi dari resep asli, disesuaikan sedemikan rupa sehingga mirip dengan yang di Labelle :)&lt;/div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;ROTI MANIS &lt;br /&gt;Bahan :&lt;br /&gt;3 C bread flour (tepung terigu protein tinggi)&lt;br /&gt;1 C all purpose flour&lt;br /&gt;3 tsp gluten (optional)&lt;br /&gt;1 T yeast &lt;br /&gt;1/2 C sugar&lt;br /&gt;2  large eggs at room temperature&lt;br /&gt;1 C warm milk&lt;br /&gt;3/4 stick butter (melted but not hot)&lt;br /&gt;1/2 tsp sea salt &lt;br /&gt;&lt;br /&gt;bahan olesan: 1 egg yolk + 1 tsp milk&lt;br /&gt;&lt;br /&gt;cara membuat :&lt;br /&gt;- using  kitchen aid mixer with a dough hook attachment and in low speed&lt;br /&gt;- campur semua bahan kering, tepung sisakan 1/4 cup.&lt;br /&gt;- tambahkan telur, susu  dan mentega. Uleni hingga kalis, kurang lebih 10 minutes. &lt;br /&gt;- keluarkan dari mixer, uleni dengan tangan di atas meja yang sudah ditaburi tepung (pakai yang sisa 1/4 cup), kurang lebih 3 minutes.&lt;br /&gt;- bentuk bulat adonan, masukkan dalam wadah yg telah diolesi minyak,  balik adonan hingga bagian permukaannya adalah bagian yg terkena minyak. Tutup dengan lap lembab lalu masukkan dalam oven yg mati (tapi hangat), biarkan selama sejam hingga mengembang.&lt;br /&gt;- hilangkan gas dengan cara meninjunya. Saya sebetulnya tidak begitu senang menambahkan bahan-bahan kimia tambahan kedalam adonan kue, tetapi karena sudah beberapa kali gagal membuat bolu kukus, kali ini saya tambahkan sedikit saja sebagai emulsifier, ternyata berhasil dengan sukses. bolu kukusnya lembut sekali dan tersenyum gembira alias mekar. Jadi rahasia sukses bolu kukus adalah ovalet? &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Hmmmm lain kali saya akan coba lagi resep yang sama tapi tanpa ovalet, semoga berhasil juga. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;Bahan:&lt;br /&gt;4 telur &lt;br /&gt;1 sdt emulsifer &lt;br /&gt;450 gram gula pasir &lt;br /&gt;500 gram tepung terigu &lt;br /&gt;1 sdt baking powder &lt;br /&gt;300 cc air soda (Sprite) &lt;br /&gt;1 sdt vanilla &lt;br /&gt;1 sdm coklat bubuk &lt;br /&gt;1 sdm air panas  &lt;br /&gt;&lt;br /&gt;Cara Membuat:&lt;br /&gt;&lt;br /&gt;Alasi cetakan bolu kukus dengan kertas lalu masukkan ke dalam panci kukus yang airnya sedang mendidih. &lt;br /&gt;Kocok telur, gula, emulsifer dan vanilla sampai kental dan naik lalu masukkan bergantian, tepung dan air soda, aduk rata. Pada awalnya seperti biasa pake ilmu kira-kira, tapi setelah dicoba beberapa kali akhirnya jadilah resep ini. Kalau menurut saya sih rasanya mirip dengan sate padang Ajo Pariaman yang di Alun-alun Bandung itu ....&lt;/div&gt;&lt;br /&gt;Resep Sate Padang &lt;br /&gt;Bahan: &lt;br /&gt;1 lidah sapi (sekitar 2-3 lb) potong 4 lalu rebus dengan pressure cooker sampai setengah matang, kerik dan cuci bersih&lt;br /&gt;2 lb daging sapi potong menjadi 4-6 bagian &lt;br /&gt;Air secukupnya sampai potongan daging terendam &lt;br /&gt;1 lembar daun kunyit, potong jadi 3 bagian &lt;br /&gt;4 lembar daun jeruk &lt;br /&gt;2 batang serai, memarkan &lt;br /&gt;2 buah asam kandis &lt;br /&gt;garam secukupnya &lt;br /&gt;tusuk sate&lt;br /&gt;&lt;br /&gt;Campur, aduk rata: &lt;br /&gt;1 cup tepung beras (boleh tambah kalau kurang kental)&lt;br /&gt;1 ½ sendok makan tepung kanji&lt;br /&gt;Sedikit air untuk melarutkan tepung.&lt;br /&gt;&lt;br /&gt;Haluskan: &lt;br /&gt;6 buah cabai merah, plus cabe kering secukupnya kalau kurang  pedas &lt;br /&gt;2 sdt ketumbar bubuk &lt;br /&gt;1/4 sdt pala &lt;br /&gt;1 sdt merica bubuk&lt;br /&gt;1 sdt jinten bubuk&lt;br /&gt;1/2 sdt adas manis bubuk (optional)&lt;br /&gt;6  bawang merah/shallot&lt;br /&gt;1 bawang Bombay ukuran sedang&lt;br /&gt;6 siung bawang putih&lt;br /&gt;1 sdt kunyit bubuk atau 3 cm kunyit  segar&lt;br /&gt;4 cm jahe &lt;br /&gt;2 cm lengkuas&lt;br /&gt;minyak goreng untuk olesan&lt;br /&gt;garam secukupnya&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cara membuat: &lt;br /&gt;Rebus lidah sapi yg sudah setengah matang dan daging sapi, masukkan  bumbu halus, daun kunyit, daun jeruk, serai, asam kandis, garam, masak hingga lidah dan daging empuk.&lt;br /&gt;Angkat, tiriskan. Potong-potong ukuran 1 x 2 x 1 cm. Sisihkan kaldunya.&lt;br /&gt;Tusuk setiap 5 potong lidah sapi dengan tusuk sate. Panggang di atas bara api sambil dibalik-balik dan dioles minyak hingga matang dan harum.&lt;br /&gt;Panaskan air kaldu, tambahkan air kalau perlu supaya total menjadi 1500 ml, didihkan masukkan  larutan tepung beras dan sagu, aduk rata dan mengental. Kebetulan nih belum expire jadi dicoba aja. Jadilah bika ambon semi homemade, bentuknya cantik dan mungil karena dipanggang menggunakan cetakan muffin, terus  rasanya juga enak -manisnya pas dan texture kue lembut sekali.
